Sustainable, healthy and tasty ingredients from edible insects to encourage a circular food system
Our current food system is neither sustainable, nor circular.
The production of animal sourced food doesn‘t account for the fact that our ressources are limited. The integration of insects as a healthy and tasty protein and fat source in our diet can ameliorate the circularity and the sustainability of our food system. The project aims to investigate food applications of mealworm larvae oil. To explore its potential as an alternative and sustainable food ingredient a physicochemical and sensorial characterization of the oil is needed.
